To impress your guests, you want things to look pretty. So to set up my plates, I start by layering the spinach:



and then putting down the noodles, followed by the avocados (one plate in each stage here).



After the avocados, I sprinkle a bit of salt on each plate. This won't need much salt, because the cheese has a salty flavor, but avocados need salt in my opinion

Finally, I top them with the alfredo and garnish with a few extra sun dried tomatoes.



And that'll please even the pickiest of relatives!


West Indian type avocados produce enormous, smooth round, glossy green fruits that are low in oil and weigh up to 2 pounds. Guatemalan types produce medium, pear-shaped, pebbled green fruits that turn blackish-green when ripe. The fruit of Mexican varieties are small (6 - 10 ounces) with paper-thin skins that turn glossy green or black when ripe.

I know we've now moved on to sun-dried tomatioes, but what I find most interesting about avocados (maybe Antipova has already brought this up) is that in South America and SE Asia, Avocados aren't used in savory foods, but rather are common in sweets (avocado ice cream, shakes, smoothies, etc.)

Aah, whoops! Somebody started plating before steaming the spinach!



Last but not least, get ready to steam the spinach! I have a vegetable steamer, so I put a little less than an inch of water in my pot, set in the steamer, and put the lid on. If you don't have a steamer, do a little less than a half-inch of water so the spinach doesn't get blanched.



Watch the pot closely---just wait until the spinach has started to turn dark. Unless your guests really like stringy, overcooked spinach (that's how my grandma prefers it ), it's better to err on the side of less-cooked. So pull the lid off the pot, and get ready to plate your delicious meal!



Root rot, due to overwatering, is the most common cause of avocado failure. It's important to test whether or not the soil actually needs moisture before irrigating, and a grower needs to be careful never to enter winter with wet soil.

That looks so good. I love spinach, I actually prefer it as my salad base. Not that I wont eat regular salads but I prefer spinach. There is something about foods that all have really natural colors that do it for me. I love the blending of greens and tans with a touch of color like red. So perfect.

Those are nice steamers to have btw, if i'm not mistaken, an 8inch SS vege steamer I still don't have one, need to get one they are only like $4 where I work.

Yep, ultra-convenient and ultra-cheap. I use it for bao (Chinese steam buns) allllll the time, and for vegetables when I'm not. Plus it makes a fun looking UFO

haha sure does! I still have not been able to get accustomed to using SS cookware, I use some cast iron and non stick ceramic cookware.

The part you eat? I know this from having bloodwork done, and notice that I have unpleasant side effects if I eat them now. Not a deathly allergy or anything. Avocados seem to be ok, though.

I don't have anything really nice, except two of my knives. Mostly I have "second cheapest stuff"---so I'm not paying for a name, but it's better quality than the stuff they make for people who "don't care and just want a pan."

I just checked to make sure my pans had thick enough bottoms and called it good
