It's not really so necessary---I worked at a restaurant for a while that made their own hummus, and their recipe was pretty similar to the one I just listed, but with no tahini. It still tasted quite good.

Well, generally hummus does. The traditional is tahini, which is made from sesame seeds. You can find it in the ethnic, health food, or nut butter section of your grocery store. If you can't, you can also substitute peanut butter for it.
