Default cookie procedure is to mix your wet ingredients in one bowl, your dry ingredients in another, combine the contents of the two bowls, add any mix-ins, and chill a while, then roll, cut, and bake.

So for the gingerbread, mix the egg, the oil, the molasses, and the brown sugar in a bowl.



All the way until the egg is fully mixed in and the sugar is incorporated.



Much of the fragrance of citrus fruits is due to the flavonoids and limonoids in the outer layer of the rind. This is why the zest and juice of a lemon taste different, and also why just a bit of the essential oil from lemon zest is enough to scent all the butter in a whole batch of cookies.

If you have a sifter, sift all the dry ingredients together. I don't have a sifter, so to be sure all the baking powder is mixed in well (without any disgusting pockets of baking powder that you might bite into later) I put one half-cup of flour in a bowl, add all the spices and baking powder and salt, and mix them together really thoroughly.



Stir your rich flour into the wet ingredients...




Because citruses hybridize so easily, new fruit-bearing limbs are usually produced by grafting. The grafting rootstock is chosen for disease-resistance and hardiness, while the fruit-bearing parts of the tree are selected for fruit characteristics).

Unlike pears, citrus fruits do not continue to ripen once they have been removed from the tree. Starches will not be converted to sugars---the only change that will happen is the onset of decay.

Finally, wrap up your dough and set it in the fridge to cool!



The cooler the oils in the dough are, the less the cookies will expand in the first stage of cooking. Since you want your gingerbread to hold shape and not spread out, cold dough is good.

In California orchards, the most dangerous insect pests are aphids, whitefly, and scale. European Brown Snails can pose problems as well, but can often be controlled using ducks. (How neat is that?)

Lepidoptera larva commonly eat citrus leaves (and indeed they are a major pest for many fruitgrowing operations).

While your dough chills, set your oven to 300F, and put out some tinfoil and spread it with a thin layer of oil so your gingerbread won't stick. Make sure you have a big flat cookie sheet in your oven warming up to receive your dough.

I love gingerbread, but I usually cheat... If you're looking for an easy and delicious mix, Trader Joe's makes a great one, and there are instructions for soft cake as well as crunchy cookies (could probably be used for house pieces also). They only sell it around Thanksgiving to Christmas, and the price is reasonable. It's spicy and flavorful.
