I've used a hint of butterscotch before in some of our gingerbread..it gave it a different taste..

And while we're going over ingredients, the Lemon Zest Cookies only take two that you don't already have out.
Lemon Zest Sandwich Cookies
0.5 cup (one stick) butter, warmed to room temperature
0.5 cup powdered sugar
zest of one lemon
0.5 tsp salt
1 cup all purpose flour
For the filling:
Raspberry Jam
For the Icing;
0.25 cup powdered sugar
juice of half to one lemon (depending on size and juiciness)
zest of part of one lemon, minced a little bit
And for the Sidecar so the rest of your juice doesn't go to waste:
2 parts Brandy (2oz)
1 part orange liqueur (like , Cointreau, or Grand Mariner) (1oz)
1 part lemon juice (1oz)
ice
lemon twist
