#EdenCooks - Chinese Steamed Fish - Mon May 21, 8pm EST

Welcome to the April Meeting of Eden Cooks! Eden Cooks is a cooking club for any interested members of the Eden community. We will meet on the forum to discuss everything from tips and pointers for less well-equipped kitchens, explanations of cooking terms, and important techniques. There will be a featured recipe each meeting, with pictures taken as I prepare it for you. I will cover some ingredient substitutions to make each recipe more friendly to people with dietary restrictions.

As we kick full swing into spring, homegrown vegetables start showing up on our plates, and we're inspired to cook healthily. I, also, don't have air conditioning, so I want to find ways to cook delicious healthy meals without making the kitchen unbearably hot for the rest of the night.

Steaming is a perfect solution to this---the method I'll be showing you was developed by Chinese home cooks who needed to supply even heat on open-topped cooking stoves, when they didn't want to dilute their meal's flavors by boiling. Letting the vapor from boiling water cook your meal can make a simple fish and some scallions into a delicacy because the texture will be perfect. And once you learn how to steam a fish, you'll be able to steam anything else you can think of! This is a really versatile technique, and one I almost wouldn't eat without in the hot summers.

So as an introduction to steaming---Chinese Steamed Whole Fish with Ginger and Scallions. I can't wait to share it with you!

Tim, it's 'steamed' not boil, it preserves the flavor of the fish (if the fish is fresh).

Wow, Antipova, now that's something in my league. Hopefully I can attend, I'll have to cook something for dinner ahead of time that night, so I can be at the meeting instead of busy preparing dinner at that hour (since I'm on the west coast).

MM...steamed fish is so yummy and incredibly easy to make. That was seriously what I lived off of two summers ago when I had to start cooking for myself.

They're pretty good and not much bones. And I usually tip the seafood guys a few bucks and have them completely clean the fish stomach, so I don't have to deal with the nasty fishy stuff when I get home.

Oh my gosh, you guys. I just made this tonight and it was so delicious. We got a 3# fish (it should be like a 2# fish should serve four people), and with just three of us we still had nothing left but bones.

I served it with a soy sauce / vinegar / ginger dipping sauce... I think I will never serve fish any other way again.

Interesting dipping sauce, what kind of vinegar did you use? Almost sounded like a sauce used for eating Pot Stickers.

The recipe book I've been learning from lately just said distilled white, but I used some white rice vinegar. (I'm pretty sure they're pretty similar?)

This sounds like fun. I really want (and need!) to start eating healthier. I guess that means I'm going to have to learn to cook... without the use of the microwave. lol. I love fish but my boyfriend doesn't like it unfortunately.

White rice vinegar is probably less sour and has a slightly sweeter flavor than distilled white?

I think this dish can be done to chicken too. Steamed/white chicken is my one my favorite Chinese dishes!
