Irene Kuo's Steamed Whole Fish

1 sea bass, striped bass, whitefish, or trout (~2#)
1/2 tsp salt
2 Tbsp dry sherry
4 quarter-sized slices peeled ginger, shredded
2 large scallions, cut into 1/2 inch shreds
2 Tbsp peanut oil




Individual dip sauce

1 Tbsp light soy sauce
1 tsp distilled white vinegar
1/4 tsp minced peeled ginger


This recipe definitely takes the "simple ingredients, subtly complimented, produce a delicacy" approach. The fish steams with only salt dissolved in sherry, and ginger.

After steaming, it is topped with scallions and hot oil is poured on to cook the scallions and add flavor.

The simple soy, vinegar, and ginger dipping sauce adds a bit of salt to the diner's exact taste.

Having something to steam in is important---and not everybody has a handy Asian market where you can pick up a steamer like mine. (Mine has a deep bottom which can be filled with several inches of water, two steam racks (so one meal component can be warmed while another cooks), and a lid)



However, just about every hardware store sells a collapsible vegetable steamer for under $5. This can fold up to sit in your cabinet, or be expanded to fit an any size of pot you have handy. Cover your pot with its lid and you've got a steamer! When cooking in other people's kitchens, I've even put a metal bowl or grate on top of a jungle gym of mason jar lids, and my steam buns come out just as nicely. So don't be discouraged by lack of equipment---improvise. Anything where you have about two inches to hold water, and another blank inch to allow the water to boil without splashing your food, will work just fine.



Trivia: Ginger is propagated by taking divisions of the edible rhizomes. Because it is a biennial/perennial plant, it grows in locations where there is never a killing frost. It is principally grown in tropical countries.
