When the fish had been steaming about 10 minutes, I poured several tablespoons of peanut oil into a small pot and let it begin to heat up.
When the fish is finished cooking, you want the oil to be very hot but not smoking. If you get there too early, turn it down.
Trivia: Jamaican ginger was the first oriental spice to be grown in the New World and imported back to Europe (beginning in 1585).

Take the lid off your fish and take a look at it!
If it is ready, place it in its serving bowl.
Cover it with your green onions.
Pour the hot peanut oil over it, instantly cooking the scallions and pouring all of their flavor into the fish.

Place your fish in its serving bowl at the center of the table, with each of your guests ready to accept a portion and dip their bites into their dipping sauces. Stir-fried bok choy makes a great side dish, and so would broccoli or anything else green.
(And then my camera died, which turned out to be a good thing---at least there's one nice picture!) ]

I've actually tried steamed dumplings before - they were pretty good. All I did was pop them in a steamer for 10-20 minutes after mincing the filling and it was golden, so there wasn't any extra oils or anything to add.
