This has to be one of my favorite threads...
I had a really great day today so I treated my roomie and I to riblets and fries. It was a new place called "Happy's Pizza". They hit the spot too...and so did the Pepto a few mins ago!

Tonight was a take on a Bobby Flay shrimp recipe.
2 cups of soy sauce
1/2 cup of lime juice
1-2" of a ginger root (peeled, not used in figging)
1/4 cup or so of onion
1/4 cup of garlic cloves
now...
stick it in a blender!
marinate chicken in the marinade for 1/2 hr to 1 hr then apply to pre-heated grill or in a wok.
on the side:
bashmati rice with a couple bay leaves and a 1-2" inch stick of cinnamon from the rice cooker.
all we needed was some broc or asparagus.

My dinner was spaghetti wheels and tomato sauce. Boring, I know... And to make matters better, it wasn't even fresh - it was heated up from last night. HAHAHA!!!

I'm usually more in favor of fresh over leftovers except for one thing: Chinese dumplings. We pan-fry leftover boiled dumplings the morning after and it's always delicious!

We used to make them from scratch at my parents', but now we only do that on special occasions and holidays I get really good frozen dumplings from the local Asian grocery--we had pork, "meat" (turns out the meat was shrimp), celery) ones for lunch today; I totally botched the pan-frying though!

We make a dumpling dipping sauce from soy sauce, vinegar (white works best, but there are some aromatic ones that work too), grated garlic, grated ginger, and sugar/mirin. Sort of in variable proportions, but go easy on the soy sauce. Resulting dipping sauce is pretty good!

Thick cut pork tenderloin chops stuffed with sliced apples, 5 spices, and covered in soy sauce (good stuff, not LaChoy) and/or sesame oil.
Option: sprinkle on brown sugar if desired..
Bake about 400 for 45 min - 1 hr (depends on oven).
It was amazing!
serve with cottage cheese and a lite salad.

Tonight will be manicotti stuffed with tons of cheese in a nice tomato basil sauce. Caesar salad on the side, and a nice big glass of 7 Deadly Zins.

I do believe we're doing Chinese take out tonight. I'm starving and the truck is borked and I can't get to the store and my freezer is emptyyyyy. As is my tummmmyyyyyy!

well, my honey has been away for a week and not coming home for about another 2 weeks. I have been really bad at having fast food and junk at home. Tonight I decided to do something off the wall and actually make dinner for myself, lol. I made parmesean encrusted tilapia, bow tie pasta with pesto sauce and sweet corn. It was delicious! It's funny, I just got off the phone with my mom and we were discussing dinner then I looked online and saw this dinner discussion.
