What fats do you use in your kitchen?

It really depends on the thing!

For frying, I always use vegetable oil, but for most things I prefer extra virgin olive oil. However, I also use bacon grease and butter for a lot of things. It really depends on the flavour and function you need for the dish.

Usually I try to keep with extra virgin olive oil for health reasons, but when I'm baking or making something I know is going to be unhealthy I go straight for the animal fats because I can definitely taste the difference.

Most of the time I use Olive Oil. At times I will use coconut oil, if we happen to have it in the pantry. For recipes that require it, I use shortening, but this is mostly for baking and very very rarely. Butter I use for certain recipes where I feel Olive Oil might negatively affect the taste, such as mac and cheese. Vegetable oils, again usually only for baking. The only thing on that list that never gets used in my home is margarine. And bacon grease I only use if I have just made the bacon- like for eggs or whatever else I may eat with that meal, I do not save it for later use. I have never used lard and probably never will, but my grandparents use it sometimes, so I have eaten food cooked in it.

We found out that if you use olive oil to make say a stir fry and you add in the oil first and it heats up too much, that is actually really really bad for you. They now suggest coconut oil to use instead. Coconut oil gives a fresh nutty flavour to foods!!!

In Canada I use coconut oil, and here I add splashes of olive oil on top of foods. Otherwise I don't cook with oils.

Almost exclusively olive oil, though occasionally some vegetable oil or other things if I am doing more specialized cooking. I don't really have a problem using things like bacon drippings or other bad fats if I am cooking a recipe that really calls for it, but those are rare occasions.

For cooking, mostly EVOO or canola oil unless butter works out better (i.e. to make a roux). For baking, whatever the recipe calls for (usually butter), though sometimes I'll sub half the fat with applesauce.
For spreading on things, usually Smart Balance. I like the taste and it doesn't have any hydrogenated oils. (Hydrogenated oils = hidden trans fats)

I use a lot of olive oil, with butter coming in second. Vegetable oil is used pretty much exclusively for baking in my kitchen and I enjoy cooking my brussels sprouts in bacon grease. Mm, tasty.

Mostly butter for cooking, but sometimes I'll use olive oil. For deep frying, peanut oil FTW! For baking, when oil is called for, I mostly use organic canola or organic safflower. I've also been using Smart Balance margarine, because it doesn't have any hydrogenated oils, but I'm trying to transition to Earth Balance (made by the same people, but without GMO soy). My husband keeps complaining about the flavor of all the different Earth Balance varieties, but I'll keep looking until I find one he'll eat.

I use butter, olive oil (extra virgin and virgin) and vegetable oil.

I never use margarine as I would rather eat grass.

It depends on what I'm making. I typically use vegetable shortening to grease pans and cookware. As for actually cooking, I use coconut oil, olive oil, butter, and canola oil. Although I don't use canola oil much any more. Lately I've been replacing it with coconut oil.

I cook with olive oil almost exclusively. I will use canola in baked goods, and occasionally a smidge of butter when that flavor is really needed (ie, toast!)
