To get the filling back into the egg whites, I usually make a sort of pastry bag out of a small zip-top bag. Scoop the filling into the bag, working it down towards one corner like in the picture above. Next, cut off the corner with a pair of scissors to make a hole a bit smaller than the part of the egg white to be filled. Pipe the filling into the egg whites. Sometimes a bit of excess water is on the plate or the egg whites, making them slide around on the plate. This can be solved by putting a piece of paper towel under them while filling them.
Fun Fact: The term “deviled” when related to food first emerged in 18th century England and referred to any food cooked or seasoned with hot spices or condiments such as mustard or cayenne pepper.

Last time I think I smoked half the peppers, and combined it with apple cider vinegar, onions, garlic, ground dry mustard, salt, black pepper, some sugar...maybe something else, I don't recall. Then I cooked it, pureed it, and bottled it. It was pretty tasty.

Mmmmm...sounds great. I prefer homemade salsas and sauces. I make a mean homemade jalepeno salsa.
