OK, let’s finish this pie off, then I have another $25 gift card to award.
Before placing the filling into the pie pan, mix in the cilantro. Cilantro breaks down quickly when heated, so putting it in the filling just before baking it will keep all the taste from breaking down.
Once the cilantro is mixed in, place the filling in the pie pan, packing it in tight. Then roll out the other half of the dough and place it on top of the pie, cinching the upper and lower crusts to seal it.
Bake the pie at 350º for 25 minutes or until the crust begins to brown. And voilà!
Before cutting into it, let it rest for 15-20 minutes. This will allow the pie to be easier to cut and transfer to plates without falling apart.
And that’s it! Any questions?
