Salmon could work, but the taste of the fish gets pretty overwhelmed by the other flavors in the dish. As such, salmon could be an expensive fish to cover up.

Yup, Worcestershire too lol. Avocados, onions, garlic, lime juice, and steak seasoning too. The Worcestershire gives it an interesting flavor that's really neat.

Thanks, but it is a pain in the ass to clean. I wish I had a gas cooktop, but that's not possible here (well, it's possible, but not economically feasible)..

Ooh we have a lake full of catfish and crappie so either one of them would work and they don't cost me anything but a couple of minnows

Not too expensive up in the northwest I miss the widespread availability of good fresh salmon down here in California.

I bet this would be brilliant with tilapia too.

Yup. Either would work fine. I'd steer away from bullheads and use channels cats, though. They don't add a "muddy" flavor that the bullheads do.

Yeah... I've got one of those, too. What I hate the most about it is there's no window to peer into the oven. If I want to check on something, I have to open the door and let all the heat out.

I live in the Northwest, so I know how cheap salmon can be, but it's horribly expensive most places. Tilapia is a great choice too.

Im in a rental, so we get the crappiest appliances around. Our gas doesn't regulate properly so one day it burns the next day it takes forever.

Next we need to cook the fish, really, any way you want to cook the fish is fine. I choose to cook it in the same pan as the other ingredients to cut down on the amount of dishes, but if you want to grill, smoke, or bake the fish, be my guest. For this dish, I chose basa, a southeast Asian catfish with a mild, sweet taste. It is one of the cheapest fish out there, which also helps.

However you decide to cook the fish, cook it until it turns white all over and then shred it apart coarsely with whatever you have been using to stir the vegetables.




If you are a vegetarian or vegan, you can tweak this recipe my adding a variety of other vegetables. I’d suggest items such as yuca, plantains (ripe and unripe), sweet potatoes, peppers, and potatoes. The taste won’t quite be the same, but it will still be really good.

"Ugh" is right. Same for me. When we moved in the place smelled of gas and the landlord wouldn't get it fixed. Called a guy, thought we had it fixed, then the inside would flare up sometimes when we open the door, so we had to call another guy. Honestly, I'm still leery about the thing.
