Okay, final step! You need to flavor your lentils. Most of the flavors we enjoy in our foods bind to oils, and so the flavors of the aromatics and spices we're adding are enhanced, and will spread better through the dish, thanks to cooking them in oil before adding them to the lentils. I chop up all my vegetables first. Keep them in separate sections on the cutting board: onion, then garlic/ginger/chilies together, and tomato separate and last.



Heat your oil, ghee, or butter in your small skillet. When you think it's hot enough, toss in one whole cumin seed. If it doesn't pop, wait a bit and try again. If it pops, add the rest of the cumin seeds.

Quickly add all the chopped onion, and sautee until it's cooked. Now add the garlic, ginger, and chilies. Toss these around for ~ 1 minute.

Now add one spoonfull of each of the spices listed: turmeric, coriander, cayenne, garam masala, and salt.



Finally, turn off the heat and deglaze the pan by adding the chopped tomato. Stir it up so all the oil and flavor comes off your skillet in the tomato's juice. Pour immediately into your waiting lentils, and stir it up.





Trivia: Lentils can be grown in cool climates or planted early because they are somewhat tolerant of frost. The lentil plant flowers from bottom to top, and each flower produces a pod with one or two seeds inside.

Here we have the finished dish! (And next time Vaccinium tells you he's no good at plating his food, just remind him what kind of pictures I slopped up for you all. Indian food is famous because it's *tasty*, not because it's *pretty*---but my plating skills could use some polishing.)

Remember, if you can find nice chaki atta, your chapatis will be a beautiful golden color. If you and your family aren't hung up on propriety, you can eat this meal with your hands by tearing off a piece of your chapati, "swaddling" a bite of lentils, and then eating the chapati and lentils at the same time. Cutting it with a knife and fork works too, of course.


Trivia: Young lentil plants are spindly and not very competitive against weeds, but they are also very easy to damage by mechanical hoeing. This makes weed management tough. Luckily, because they grow in a dry climate, lentils are relatively free from most fungus-type pests, as long as crops are rotated.

Ok, we're running low on time, and I don't want people ot have to leave before the gift cards are awarded, so I'll just share: My usual way is to put about 1 Tbsp of kosher salt in my hand, and then pour about the same amount of distilled vinegar in the other. I rub my hands together til the salt's dissolved, then rinse off with water. It really makes a big difference.

I'm a bit of an odd ball and actually kind of like the scent of onions on my hands. Which is good, because for whatever reason it lingers for days, even after washing my hands and showering.
