I might have promised pancakes, but we're actually going to start off with syrup.

Maple syrup is delicious but expensive, and I more often use it in places where you really appreciate the maple-ness (like in making candies). I think most people, on their pancakes, use storebought syrup. Do you?

I usually put peanut butter on my pancakes, but maybe once I learn to make syrup I will have a new favorite.

So here's how you make your own syrup. Taylor, promise you can do it on you first try!


Brown Sugar Syrup.
1 cup brown sugar
1 cup white sugar
1 cup water.



Sugarbeets are a close relative of the table beet---close enough that if a sugarbeet field is planted near a table beet field, they may be cross-pollinated (resulting in a not-delicious half-breed).

My kids do. I like peanut butter and sorghum if it's available.

Bring to a boil, stirring occasionally. Once it reaches a boil, turn the heat to low, and let it keep bubbling gently until you are ready to eat.

Got that memorized yet? That's your entire syrup recipe!

Once you let it cool, it will thicken to a regular syrup consistency. If you're on top of your game and can make this the night before, bottle it and store it in the refrigerator.


Like carrots, sugarbeets are biennials.
