I saw it in the lovely Doomsday Preppers show that (as I recall, vaguely) you can store them for up to 12 months if you thinly cover them with oil!!! ~grins (Look it up online, I bet you will find info on it! ^^

We put the eggs in the fridge even when my paw paw had chickens when we would go get them out of the coop they went right in the fridge.

I keep them refrigerated but take them out a few hours before doing recipes. Room temperature eggs are much better for beating egg whites into snow and so on...

they make fluffier omelettes room temp. i sit out enough for the day when i'm gonna make omelettes. otherwise fridge

In a lot of other countries--Germany is the one that I know of firsthand--grocery stores actually just sell eggs on a shelf next to bread and other non-refrigerated items and no one puts eggs in the fridge. Since the population of Germany isn't suffering from an epidemic of salmonella, I'd say that's a pretty good reason to think that refrigeration is totally unnecessary for eggs.
