Do you refrigerate your eggs, or leave them out?

Hello, one of my friends tell me she leaves her farm eggs on the counter and not put them in the fridge. I buy mine from a local farmer but I refrigerate them afterwards. But it has me wondering can I leave my eggs out of the fridge?

If you do leave them out how long will they stay good?

I keep my eggs in the fridge because we don't eat them quick enough to keep them on the counter; otherwise, I'd prefer to have room-temperature eggs. In Europe, eggs are often kept on the countertop, but in small amounts rather than by the dozen. If you're unsure how long your eggs will last on the counter, just leave a few out to start with. They should actually be good, in an unbroken shell, for up to a week. Hope this helps!

Ours are always in the refrigerator. We used to raise chickens though and you can safely leave them out if it's cool for up to 2 or 3 days.

Tried to edit my post, but another post was made, so here: Be careful, though! If you live in the US, which it sounds like you do, the poultry industry here is not as clean as it could be. Wash your egg shells before storing them at room temperature to keep the risk of foodborn illness as low as possible.

I refrigerate eggs. Technically, very fresh eggs can safely be left out on the counter for a few days. The problem is, you don't know how long the eggs have already been sitting out BEFORE you buy them. That's why refrigerating them at home is so important.

The eggs don't generally come straight out of the chicken and then straight to the store. There's generally some processing time, some transit time, and then some time before they get put out on the shelves at the store. Getting fresh eggs straight out of the chicken? Then you're fine, not to mention lucky!

Something about leaving eggs out for days just doesn't seem safe to me. I always put them in the fridge unless I'm going to use them to bake with or something. The longest I have eggs sit out is until they reach room temp next to the butter so when I bake I can mix them together easily.

If you have bought eggs from a farmer and they are fresh that day then leaving them on the counter won't hurt you and some say it improves the flavor and nutrition. Free range eggs are safest to do this way. If you buy them in the store they will go bad quicker than if they are not refrigerated. Rotten eggs are NOT pleasant!

I keep mine in the fridge out of habit, but eggs are actually totally safe unrefrigerated. In a lot of other countries--Germany is the one that I know of firsthand--grocery stores actually just sell eggs on a shelf next to bread and other non-refrigerated items and no one puts eggs in the fridge. Since the population of Germany isn't suffering from an epidemic of salmonella, I'd say that's a pretty good reason to think that refrigeration is totally unnecessary for eggs.
