Is it weird for a perosn in their 20s to date someone in highschool thats just turned 18?

No. If someone was in there 30s or 40s I'd find it a bit more weird, but really from what I've seen, if it's actually a loving, honest relationship, it really doesn't matter what age people are.

I was 17 when I met my 23 year old ex. We didn't have sex until I was 18, but it was fine. I told my parents he was 2 years younger and it was no biggie. We were together for 4 years. As long as parents are ok with it and it's completely consensual it's ok.

That's not that weird, I started dating my partner in high school and when she went off to college (while I was still in high school) there wasn't any weirdness at all.
As long as both of you are happy that's what really is important.
Of course, if you are an administrator at her school or something you might want to reconsider.
