I've heard some of the metal balls chipping, but anyone experience this type of thing with the glass ones?

I've seen the chrome plating peel off of even relatively high quality wrenches.
With a stainless steel toy that is all stainless steel and NOT plated, peeling would not occur nor "chipping".

By coated, do you mean that they were chrome plated perhaps?
