Start with something that's an inch in diameter, silicone, and has a slight curve to it.

A lot of the dildo buying guides I've read recommend using your finger(s) to get an idea of the diameter and/or girth. Usually 1 or 2 fingers is a good starting point, so you wrap a measuring tape around those fingers and go with that number. Length is less of an issue since you only insert what you're comfortable with.
I'd like to warn you to watch out for the material you choose. Materials like glass and metal have no give, so I avoid them, but even in sticking with silicone there's such a variety of firmness that I've found that toys with the exact same measurements can still feel different in use.
My vaginal opening is stubborn, but I like feeling full (not stretched!) and G-Spot stimulation. Here are some toys that I found easy to manage (as far as girth goes):

Size is a big factor, but you should also take a few other criteria into consideration. For us, shape and texture make a big difference. Shapes can vary greatly. Straight or curved? Is there a pronounced ridge on the head? Is it pointy or blunt? Does the thickness run the entire length or is it tapered? As others have stated the material choice can also make a huge difference. I agree with RonLee it will take trial and error to find the best size for your needs.
If you are looking for specific recommendations, I'd suggest starting with a tapered silicone toy close to whatever size you feel will be closest to your comfort level. We started with a toy that was 1 1/4" diameter and it worked quite well for us. With that said, we now have dozens of dildos. We have truly enjoyed the trial and error process.

One way is to get a tapered dildo like the Tantus Champlette. See how much you can take - then try some that are similar in size. In general you can use a larger dildo if they are soft like Vixskin vs. hard like plastic, glass - even hard silicone.
