I've been looking into getting an inflatable anal probe or plug. How safe are they?

As long as you have no problems with the material they're made from (usually latex) then you should be fine, but they can always be covered by the condom of your choosing.

They're not going to burst inside you, if that's what you're worried about. The material is pretty thick, so you'd have to inflate it to a ridiculous size before it reached its limit, and would pop.

There aren't any silicone options yet, so there will be potential chemical leaching issues and cleaning problems with any of these.

As Incendare pointed out they don't pop like a balloon. The most common failure seems to be leaking, in which case the air will be harmlessly expelled from the anus.

The only danger is a potential latex allergy, but covering it with a condom should alleviate that.
