This is such an interesting question! On the whole, I would say "sex," because to me it's a catch-all term, whereas "fucking," to me at least, is one type of sex.

Depends entirely on the context. In heterosexual relationships like mine, I think of the verb "fuck" as being synonymous with intercourse (unless otherwise mentioned - e.g. "fingerfuck"), whereas "sex" isn't... so it depends.

It *really* depends on the situation for me, and can be a matter of degree. In a review, I would mostly use the word sex, unless something worked really well, and then I might say, "We were really looking forward to trying sex with this. It turned out to be a mind-blowing fuck."
Likewise, in speaking to my partner, there's a difference in the amount of urgency for me depending on which word I use. "I'd like to have sex later tonight," versus, "You had better fuck me now!"
