Well, it started out as a very religious thing. Somewhat similar to what Rod said, but not quite so sarcastically flippant .
Why do we say it now? Mostly out of habit, but also because it's polite. It's like saying excuse me after you belch or fart.

My man and I actually imitate Seinfeld. After either of us sneezes, we say "You're soooo good looking." That's got nothing to do with your soul leaving your body or your heart stopping for a moment - we just think it's funny!

Social thing? I say it because I feel left out when I sneeze and no one says bless you. I had a teacher last semester who HATED it when people said "bless you" in the middle of class. She thought it was a distraction.

You know, I noticed that it really depends on where you are...either that or my extended family is kinda rude. I've always been taught to say bless you when someone sneezes and have learned to expect the same when I sneeze. I went to visit my grandmother and some distant relatives and I sneezed and nobody said anything...it felt so...wrong. I just kinda stood there waiting for someone to say something but nobody did. Around here, if I sneeze, everyone in the room says bless you.

I looked it up a long time ago. There were two popular theories.
1. When you sneeze your heart kinda misses a beat, so people said bless you in hopes that your heart would beat again. Gotta be kinda quick on that one.
2. People believed that when you sneezed a demon was trying to enter you, so they would say bless you... as in God would bless and the demon couldn't enter.
I believe in blessings, so I say bless you to people when they sneeze... just because I believe.
