I enjoy cooking a lot, but i rarely do so for myself. Currently i've been making vegan stur-fry and rice for my partner a couples times a week while i stay there since it's an easy meal and also very filling. For the holidays i always try and bring at least one vegan meal so my partner will have something they can eat.

Mine would be my lasagna or fried chicken and Spanish rice.

I am the only one in my family who really cooks anymore. That being said, my family loves any kind of chicken that I make. I just don't cook a lot of beef.

In a sauce pot with a little olive oil, saute a large diced onion and whatever other veggies you want (for example, a couple celery stalks and a red bell pepper.)
When the onions are translucent, add stock or broth (chicken broth is yummiest.) I use 32 oz of broth for one onion+ a couple other veggies, but it depends on the size of your pot, how many you are feeding, how thin you like your soup.
Once its heated, add peanut butter, about 8 oz for 32 oz of broth (1 oz peanut butter for every 4 oz broth.) You don't need to measure this in a measuring cup (thats sticky and messy), just approximate based on the size of your pb jar; so if you have a 16oz pb jar and you want 8 oz, just scoop out and use about half; easy!
Now, at first, this will look grainy, don't despair! You have to heat it to a rapid boil. Once a peanut butter foam starts to form on top, THEN it is all melted and blended in and delicious.
Add any veggies you don't want over-cooked, like shredded kale or spinach.
Taste it; if its thin and tastes weak, add more peanut butter. If it tastes like its just diluted peanut butter, add more broth. Done!
Soooooo good! So creamy and savory! Great healthy, delicious vegan meal (if you use vegetable broth, but you could also go the other way and add small pieces of chicken if you wanted, though it doesn't need it at all, like I said, very savory.)
