I'm bored and I feel like cooking a real meal for dinner tonight. I just don't know what to make. It's noon now and I usually eat dinner around 7 or 8 so it would have to be something I can prep and make in that time period. Any suggestions? What are you having for dinner tonight?

I'm trying to initiate sit-down meals with my family, I bet they would be more inclined to do so if there was a real meal in place. I'll check google, too! Thanks.

Pizza Casserole
You can use your favorite pizza toppings for this. The recipe below is what I like to use for this dish.
- 1 box of small, tube-shaped pasta
- 1 package of Hormel pepperoni slices
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 small yellow or sweet onion, diced
- 1 small clove of garlic, diced
- 1 large jar of pizza sauce
- 1 package of shredded provolone cheese
- 1 package of shredded mozzarella cheese
Fill a large pot with salted water, bring to a boil and add pasta. Cook for 8-9 minutes until al dente. Remove, drain and run cold water over them to stop the cooking process, then set aside.
Lay out pepperoni slices on a baking sheet and preheat the oven to 250 degrees. Bake for five minutes so the slices crisp up slightly.
While those are baking, sautee onions, garlic and peppers for no more than one to two minutes on medium-high heat with a drizzle of oil. Set aside. Mix cheeses into a large bowl.
Once everything is prepared, mix the sauteed vegetables into the sauce. Create one layer of pasta on the bottom of a glass baking dish, top with a layer of sauce, then a layer of cheese, then a layer of pepperoni. Repeat until you reach the top, leaving off the pepperoni slices for the last layer. Bake at 375 degrees for twenty minutes, up the temperature to 400 and bake until the cheese is bubbly and starts to brown. Add your last layer of pepperoni and bake until the desired crispiness is reached.
It's a hit every time!
