The darker the better. About 75-80% is perfect. I love chocolate with raspberry, strawberry, cherry, mint, or orange. Caramel is acceptable but not my favorite. A wine shop in my city sells a champagne truffle I'm partial to. Vosges chocolate is excellent, as is Chuao.

The darker, the better. I do like high quality milk chocolates though. I can stand white, but it's not my favorite, tastes odd.
