It depends on the kind of music, but my favorite instrument as far as the sounds it produces would probably have to be either the flute or the piano.
I don't play any instruments yet but I do plan on learning several once time and finances allow it. ^_^

ACCORDION!! I absolutely love the accordion (I'm looking at you Of Monsters and Men.) I also have a thing for folksy banjo and fiddle.
