I love all kinds of breakfast foods, but I don't have time to make them. However, if I don't have protein to start my day, I am starving by the time I get a chance to have lunch because lunch is sometimes six hours away. I get low-sugar-induced headaches easily, so I can pretty much ruin my day by starving myself that long.
Lately I've been eating an egg and cheese scramble on a biscuit. My husband bakes a can of biscuits and makes an egg and cheese scramble out of six eggs while the biscuits cook. He cuts the biscuits in half and divides the egg scramble amongst the biscuits to make a breakfast sandwich. He wraps each sandwich in aluminum foil and then places them in a zip-lock freezer bag and freezes them. I just have to unwrap one of the sandwiches and toss it in the microwave for about forty seconds in the morning, and I have the perfect breakfast to go when I'm running out the door. They are much lower fat and healthier (and better) than the pre-made frozen breakfast items that you buy at the grocery store. I keep thinking that perhaps I will make some homemade biscuits one of these days on the weekend, to make the sandwiches even better (the key words here being "one of these days . . .).
Since the breakfast sandwiches have worked so well (they really taste fresh and not nasty after being frozen!), I think we will try making homemade breakfast burritos and freezing them for a quick and easy breakfast that is much healthier and better than the fast food and frozen stuff. (We don't add nearly as much cheese, salt, and other high fat things; plus, you can add vegetables, beans, and other healthy things.)
I love coffee, but only indulge in it occasionally. I have to have a coffee on Wednesdays, though, because it is my longest day. I usually have it mid-morning. (I carry a little can of Starbucks Double Shots in my lunch bag on Wednesdays, and it is such a treat to indulge in one once a week!)
