Leftovers!

I love leftovers. I feel i can get creative with what's leftover from a dinner out or a big meal that was cooked the night before and then never finished. How about you guys? What do you normally do with left overs?

One of my fave things to do is to take leftover chicken or shrimp and cook it in salsa and then put it on a bed of rice, doesn't matter the rice.

I also like to recook fried rice and add my own veggies and spices, and even add meat chunks.

Meats and left over veggies from veggie trays make an awesome soup, too!

So how do you guys go about making leftovers a meal?

Usually make them into a sandwich, or just eat them as they are. I'm not creative that way...

I love experimenting with left overs. I make a lot of sandwiches with left over meat loaf, steak, pork, chicken. Casseroles are an easy way to use left over meat and veggies. Soup is also a great way to use left overs from a rotisserie chicken or baked chicken. I pick off all the good chicken, and the boil the carcass with herbs, seasonings, and vegetables to make a great stock. I can freeze the stock in ice trays and use it to flavor lots of different things. Or I just make a soup with all of the stock, adding the meat and veggies back in.

chicken salad sandwiches too!

With Fall coming (thank goodness!), I'm looking forward to making big pots of ____ and dinners with leftovers in mind.

Left overs are my favorite for lunch. We sometimes just eat all the leftovers that are in the fridge for dinner/supper.

We like to do this too. When get an accumulation of leftovers from the week, we have a buffet to clean out the fridge!

I ADORE leftovers. I'm making chicken pot pie (from scratch) for dinner tonight and can't wait to eat it cold either tonight, late or for breakfast.

I also love to pull apart a meal, like a meat and potatoes meal, and make a pie or a casserole out of it. It was a given when we were really young, because we had kids and no money, I could make two chicken breasts stretch to TWO meals for two adults and two toddlers!

The way the economy is now, it's coming back to me how important this is. Also, My Man, who previously bought his lunch every day at work is bringing leftovers (which he always claimed to hate before) instead. In addition to making enough for both of us for lunch, I also want to impress the guys he eats with. "Wow, your wife MADE that?" It happens and makes my day!

I'm an outwardly kinky incarnation of Martha Stewart a lot of the time ....

Both guys love to take leftovers in to work with them and like P'Gell if I get a hold of them then I'll make it look attractive and appetizing...and usually stuff the poor guys to the gills. I love feeding people! Well not in a sick fetish sort of way but when my food tastes good it makes me feel good.

I like to add leftover chicken into pasta along with lots of minced garlic and diced tomato.

I LOVE to add lots and lots of chopped-up garlic and shrimp into fresh salsa sauces - with xxx hot sauce of course! Um, sorry this has nothing to do with the original topic of leftovers. Just got carried away!

I don't know that we get really creative with them - usually they're served similar to how they were the first night. We cook in quantity frequently.

I'm not all that creative about leftovers either.

Actually, I hate having leftovers, and try to only make enough for each meal. My husband loves leftovers though. He makes enough to feed himself for a few days every time he cooks. We both eat totally different foods though, so it isn't a problem.
