I have a job interview coming up but I'm still waiting to hear back about my application from a different company. If my interview is successful and I'm offered the job obviously I'm in no position to turn it down but I don't want to lose out on this other role. Do you think it's fine to accept the job anyway and quit if my first choice comes through? Have/would you ever do that?

Companies in general do not deserve your loyalty. You will be an 'employee at will' which means - when they say you're done - you're done. They will not hesitate to cut you loose - look out for yourself.

Most companies, when you turn in your two week notice (unless you are in a position where you need to train your replacement) go ahead and cut you loose right then and there. A similar situation happened to my husband, they wouldn't pony up the money so he went elsewhere. A year later? They were banging on his door, "please come work for us, we'll pay you now". Weird things happen these days and you never know when you're going to be kissing the ass of the toes you stepped on, before.

I have done this and regretted it. If you are going to quit the job, first talk to your manager/supervisor and give them notice. That way if something goes wrong with the other job, you haven't burned the bridge at the first place.
