I find that most cuisines are pleasant when done well. I've had better and worse from most of those you listed. You've missed quite a few, but the thing is, you cannot judge a whole cuisine by one or a few restaurants you've been to.

Too many great choices. I love Italian, Mexican, Chinese, and Japanese food. Though lately I have been leaning more and more towards spicier foods in general as my favorites.
