There is a resturant around me that has a banana/walnut/vanilla bean pancake. It is soooooooo yummy! Although pecan pancakes are a close second.

I make the best pancakes with self rising flour, a little sugar or honey, powdered soy milk (Better Than Milk is the best) a bit of baking soda, some melted butter or oil, then I add some vinegar or lemon juice to the water (water instead of milk makes the cakes lighter.) I mix it together and then make the pancakes the size of a palm.
They are better than any I have ever had at a restaurant and my kids and My Man are spoiled and prefer mine to restaurant style, over dairy loaded "buttermilk" pancakes.
I put powdered sugar and lemon on mine.

Plain topped with maple syrup and peanut butter, that's the way my dad always ate them, so that's how I do it.
