Well, some new versions may have the possibility to slow yer machine down immensely, and some are just better in some ways sometimes...

Do you use any apps which you don't ever update because of any of these reasons or something else?

I delay updates sometimes because I havent finished the current quests or missions yet lol

I run old versions of a LOT of things on my computer. Normally they're just more user friendly and work a lot better.

Depending on the program, I suppose. The new AIM, for example, is a lot simpler and more user-friendly but skimps on customization.
