some good high quality cheddar works best. Provolone is good if you are putting any meat on the grilled cheese, because of its smokiness.

Any cheese is good cheese. For grilled cheese sandwiches, I love sharp cheddar and colby jack together.

Yellow vs white isn't so much the issue for me as how it tastes and how long it was aged. I like a tangy cheddar at least 5 years old for grilled cheese - the better the cheese, the better the sandwich. It's not overkill!
