I have a tongue ring and I've never experienced that metallic taste. Also if you have the right jewelry in, damage is minimal if any. While a metal bar with full metal balls is likely to chip a tooth while talking or eating, replacing those metal balls with acrylic balls has already drastically reduced the risk of damage. If you take it a step further and have those full balls become half balls, basically a dome on either end of the metal bar, you'll occasionally bit one of them while chewing.
I've had my tongue pierced for about 5 years now and my dentist has never once mentioned damage from it, and I've asked. He was more concerned about the little bit of gum damage from when my lip was pierced and I had to wear a stud in it before I switched to the hoop than my tongue ring.
It all depends on how you go about it.
