So, I've been with this same guy for three years. He's amazing, loving, patient and amazing. I've sorta as of late, gathered what that orgasm-ish feeling is, it comes from using a toy or a bullet and I get all tingly and warm... and then I stop cause I'm scared. So, he feels kinda down that I don't have an orgasm, but there's been times when I've like cried out during sex and my thighs get real wet... did I have an orgasm? Or am I just really wet? I'm not sure, everyone gives me a different ideal on an orgasm.
How do you know when it happens?

The physical hallmark of an orgasm is rhythmic muscular contractions in the genital/pubic area, including the PC muscle (the "Kegel" muscle).
If you don't think you've had one yet then you might want to play with the toys some more. Don't stop - you're not going to break anything (do play on a folded towel or something you can wash because you might discover you're a squirter).
Really wet is a good sign.

Keep going when it feels like you want to stop. I had my 1st orgasm at age 29 even though I'd played with a penis shaped vibrator before. It wasn't till I tried a clit vibrator and said, "ok. I'm going to power through this too-intense feeling till I come." It worked. My problem was that I had previously identified the response that says I'm on my way to an orgasm as bad feelings. Now I know when I'm on my way: I get hot, then my vulva itches, then my vagina itches, then the wave of orgasm comes over me. The throbbing/pulsing is unmistakable.
