This is a tricky question because she shuts down whenever you start going in that direction. My partner was pretty similar for a long time. Just recently she has read some things online (including here at EdenFantasys) that have made her want to experiment more in that area and she has allowed me quite a bit more access than I used to get.
I have learned how to gently warm her up (using either mouth and hands or just hands) and we have put butt plugs in to make things extra tight and really push me on to her g-spot so she has awesome g-spot orgasms from that.
I think communication is absolutely key with successful anal activities. Some other activities can be done without a lot of communication, but pain is too readily available with anal sex to be done without communication. She may need to find some interest in it herself before she will let you have much access there. I've noticed that you've made several posts about various anal activities, and ways to interest your GF in them. It's good that you're thinking of ways to spice up your sex life, and also good that you seem to be equally interested in her pleasure as in yours - keep up the good work.

Of the ones I've seen you mention I'd pick out rimming and pegging as things that you'll probably want to put in the "something to try later" pile. For anal sex (penis/anus or dildo/anus) there are two schools of thought. Often things are clean enough after a "normal" BM that it isn't too bad, especially if you use a condom (recommended). I can tell you from experience that a noticeable chunk of the time I don't "come clean", and since the mess does bother me a bit I do take other steps so I can be completely relaxed.
There are (again) two general ideas about steps you can take: water enemas/anal douches (NOT the chemical type) or glycerin suppositories (not bisacodyl/Dulcolax).
Two repetitions of ~10oz of warm, plain water (no soap, no anything) works pretty well for me most of the time. If you want to try the suppository route I find 2-3 works better than one.
In any case a condom is recommended for penis/anus sex (not as necessary for toy play), as many people dislike the effects of semen in the rectum, and it cuts down the risk of the male developing UTIs.
