My hubby and I love the leather harnesses, collars and gear. However, both of us are very allergic to metal, and virtually all of the leather gear have metal... rings, snaps, etc. Any thoughts on making gear where no metal touches the wearer? Is it even possible?

They make leather and pleather with velcro. But I have never seen a harness except a packer without metal snaps.

There are certainly a number of options for making gear where no metal touches the wearer. Collars and harnesses can be lined and sewn rather than riveted, and there is some pretty strong plastic hardware for fastening and adjustment out there too. For us at this point, that would be custom work, but since we make all of our gear ourselves, one at a time, it wouldn't be a really big deal to put one or two non-metallic pieces together.
