Lately when it has been a hectic day, I have cut up boneless chicken breasts or thighs and sauteed with chopped up green peppers and onion. I season the whole thing with garlic powder, salt, and pepper. The family likes them rolled up in a tortilla. Its super quick and easy and a lifesaver on some days.

I make chicken, pineapple and rice. Yellow saffron rice with pineapple tidbits and a rotisserie chicken picked apart and mixed in. Very satisfying and very quick.
I also love to do potato soup, if I have to cook quickly for a crowd. I don't peel the potatoes, just chop them up and put it in water with chicken stock. Milk, butter, seasonings, and a hand mixer, and it's done. Then I just set out a variety of toppings and let people build their own.

Tuna Helper with vegetables. I usually think tuna helper makes more sauce than really needed, so I cook a box (I like any of the white sauce mixes) with about a cup of frozen mixed veggies (such as peas, carrots, and green beans) and an extra bit of whatever uncooked pasta I have on hand (whole wheat pasta stays a little firmer) and cook by box directions. Top with a little extra cheese if it needs it. Easy one dish meal, and reheats well.

For a quick, easy meal, I'll make simple tuna croquettes (I take tuna, and then add breadcrumbs, egg, and spices to taste - form them into patties and fry in butter), or stir-fry veggies (I always keep frozen veggies in the freezer, and stir-fry them with salt, pepper, garlic, lemon juice, lime juice and soy sauce) with steamed rice, or fried rice (if I have leftover rice). Quicker yet is eggs with chorizo cooked and thrown into a soft corn tortilla. Pasta is always a quickie meal too, and usually hits the spot!

Kraft Dinner is a favorite, but if the ingredients are around either stroganoff or spaghetti are awesome! Fry up the burger, add the ingredients for the sauce, fresh parsley (or frozen), boil the noodles... Now I have to go get noodles for dinner! X3

Stupidly amazing and easy dish I made last night was a baked sweet potato with a corn, black bean and cilantro topping. I get the potatoes that are wrapped in plastic, so I just pop them in the microwave for 6 minutes, cut them open and smoosh just a little, top with a mixture of canned corn, black beans, chipotle seasoning, lime and fresh cilantro. Then top with a little sharp cheddar and bake at 350 for maybe ten minutes. Seriously, it was amazing.

Chicken salad sandwiches and a can of Progresso soup is our default "I don't wanna cook" meal. I try to always keep a can of cooked chicken in the fridge so we don't have to wait for it to get cold.

Spaghetti or Chicken Alfredo. You can get frozen meatballs and frozen chicken strips, so in case you forgot to set something out you heat them in the microwave or stove top, however you wish add to the sauce boil some noddles. If you have cream cheese, milk, Parmesan cheese, and pepper you have white sauce. Sour cream works for cream cheese sub, but you will want to add flour to thicken. Or jarred sauce works also. It takes about 15min and if you got garlic bread you are set.

It's like eating healthy candy for dinner. We always keep the coconut milk on hand, ground ginger can work as an alternative to fresh, and we just buy a large thing of lime juice and keep it in the fridge. We always have rice on hand.
It's quick, easy, and delicious, though it doesn't taste as good as left overs.

Anything involving cabbage, honestly. Just chop some up, throw it in a pan with other veggies and some meat if you like, add your favorite sauces and spices, and done! Love cabbage.

1 box of penne or the curly pasta, add alfredo sauce and one of the little packs of diced chicken. Voila, chicken alfredo.

I boil some rice and chop up chicken and vegetables throw them in a pan with some soy sauce a mirin and ta da stir fry
