I love it all as long as it's vegan. Probably my greatest weakness is guacamole, but it has to be made properly.

Chicken enchiladas with refried beans and spanish rice. And a margarita too!

Mmmm.... Mexican food.
Anything native to Mexico I love cooked or picked from a tree.
They make this one breakfast type bread thing in the Yucatan, and I love it with smooshed avacadoes on it like peanut butter. That in one hand a coconut with a straw in the other.

Tamales are sooo awesome! When they;re done right, anyway. When they're done wrong, they can be so dryyyyyyyy *parched sounds*
I always love fajitas, too ^_^

Tamales, enchiladas, and west coast burritos (I go to school in NYC but I'm from the west coast. There are some sorry excuses for burritos in New York!)

Everything! I'm Mexican, so I can make anything myself and homemade is so much better than from restaurants.

Yeay!! Luckily, Mexican food lends itself to veganism easily. Lots of dishes are easily adaptable, if they even need adjustment in the first place.

My mom's tacos are my favorite. I don't eat them anymore (ground beef and cheese) but O, the memories.

There was this place I went to about three or four years ago, it was in the back of a Mexican grocery store. It was the best burrito I have ever had. The meat was nice and tender, and it was real steak not ground beef. I swear it was the size of my calf. I haven't had another once like it anywhere and I've been dying to find a recipe for it. I'm drooling just thinking about all of the fresh veggies.
If we go to our favorite Mexican place around the corner, I get an enchilada, a burrito and a taco. Otherwise known as a #11. Sometimes I'll deviate and get just tacos, or a chimichanga but it really depends how I feel that night.

Guacamole! Or Tacos al Pastor, but good luck finding that outside of Mexico!
Does anyone have any good recipes?

This is SUCH a hard question for me to answer. I love tamales and tacos. And quesadillas. And guac. And so many other things. Eep!

Enchiladas, and soup.

So much. Carnitas, Carne Asada, guacamole, quesadillas, burritos, tacos, tamales, etc.
I grew up eating cactus and egg burritos for breakfast. Carne asada burritos or tacos were a normal dinner. Basic cheese quesadillas are simple "quick and easy" meals. I've loved pretty much every tamale I've eaten, but my favourite are my family's version. They're huge, fat ones that have to be kept closed with twine. They've got a saucy middle filled with pork, black olives, and raisins. Yes, I've been told that's a strange combination, but they are so good-- and I don't even like raisins. Fish tacos are amazing, as long as the fish is grilled or broiled, not fried. Wet burritos are my favourite kind of burritos, as long as I got it in California or made it myself. Oh! And chile rellenos are so delicious. Chorizo and eggs. A good pot of beans. Mexican rice.
Sigh. I can make most of that, but some things (like the carne asada and tamales) I just don't know how to make it. I'm trying to get my gram out here to teach me how to make tamales. The ones I get from people out here are good, they just aren't the same, though.

You name it and I'll eat it as far as Mexican food goes usually. Especially fajitas, enchiladas, tacos.
