What's you favorite cheese to pair with bacon?

I am experimenting with different cheeses and sauces for a new bacon pizza. Just those three main ingredients. So I want to see what Edenites like with their bacon. Inspire me!

I like bacon with smokes cheeses, such as smoked Gouda or smoked mozzarella. There is always the classic bacon & cheddar, or bacon & Swiss.

I need good ideas people! Help me??

I can't give you any good ideas, because I've yet to find a bacon/cheese combo that I didn't like.

I love bacon. We just tried turkey bacon this weekend. I was a skeptic, but it really was pretty good.

I agree completely with your choices of cheese thus far. In addition, I might suggest trying individually apple wood bacon wrapped scallops or shrimp, along with pepper jack cheese. Just skewer and roast for a great hors d’œuvre.

Good point, but I cannot accept that some aren't even tastier than others!

@ MrJohn, thanks for the tip, unfortunately, I am allergic to seafood. Oh do these sound yummy! I would probably just make that my meal instead of an hors d’œuvre!

Bacon does really well with blue cheese, but I will totally second the smoked Gouda recommendation. It's a great pairing for the two. Occasionally I'll have bacon and goat cheese (chevre) on a burger, which is really pretty good too.

One thing I've found that pairs well, if you like wine that is... Is a nice riesling with prosciutto wrapped peppers stuffed with bits of aged smoked gouda.

Sorry, I believe you've previously mentioned being allergic.

Instead of seafood, stuff the pepper cheese into a small cremini mushroom without the stem.

I hope you enjoy it. The Riesling pairs well with the pepper and the gouda, and pancetta is always awesome. (I meant pancetta in the previous post, though I'm sure it would be pretty awesome with prosciutto as well)
