I never liked mustard until I got older and discovered all the different kinds & found my favorite ways to eat it. I only like a very little, I find most too strong, but just like with horseradish, I have found the right touch really elevates a dish. My favorite mustard of all time, and the one that make me change my mind about mustard, is Anna Mae's Smoky Mustard by Robert Rothschild Farm. I mix it with a little mayo and it is amazing in chicken salad and on Swiss cheese, too.
