#EdenCooks - What do you eat for breakfast? (Future Eden Cooks meeting topics)

I feel like we have spent a lot of time on dinners with Eden Cooks, and plenty of time too on recipes that can be made in advance and eaten for lunch. But in almost two full years of Eden Cooks, I don't think we've ever focused on breakfast!

But before we haul out a bunch of recipes for the beginning of the day---what do you and your family *usually* eat? Not like "oh, on special Saturdays we have French toast,"---what is your daily, wake up and put in your stomach breakfast?

Sometimes I go through phases of oatmeal, and other times granola bars I've made in advance. Right now I'm trying to eat more protein earlier in the day, so I have been making ciabatta rolls (in advance!), and having peanut butter or cream cheese (cherry walnut cream cheese, to be exact!) with them.

What do you eat on a daily breakfast basis? What do you want to incorporate into your family's diet first thing in the morning? Let's brainstorm!

A traditional breakfast for me would be:

Blueberry pancakes with syrup
Bacon and sausage patties
Fresh orange juice
Freshly slice fruit

There are plenty of times where I've made french toast, or sausage gravy and biscuits...breakfast doesn't tend to be very fancy around my home.

For me it depends on the day. Some days I eat oatmeal and scrambled egg whites, other days it's cold cereal and yogurt. I do almost always have yogurt and a banana with my breakfast though. I'd love to see a recipe for homemade yogurt! I've found some recipes for homemade greek yogurt in a crockpot but I've always been too afraid to try it for myself.

I love bagels and greek yogurt and I tend to go back and forth between the two recently. Sometimes the bagels sneaks to lunch with grapes and some chicken salad though lol But greek yogurt or yogurt/granola/fruit parfaits are a must for things to keep ingredients for around here.

Cinnamon apple waffles (I have waffles basically every morning but once my mom had left over apples from assembling a pie and I have found time to make it at least once a week)
I've attempted cinnamon roll pancakes and while they tasted great they weren't perfect


And oatmeal on whole grain toast. Don't judge me.

Breakfast can go two different ways in my family. Either we slap together something simple like cereal or we go full out with french toast and scrambled eggs. On occasion when I am cooking for just myself I will make oatmeal with milk, instead of water. Then I will add pancake syrup and banana slices. It's probably not a very healthy option but I really enjoy it!

I usually don't eat breakfast because I wake up early and it's too cold for me to care. But I try to eat a piece of toast or cereal so that I'm not so cranky. Whoa, cherry walnut cream cheese sounds yummy. I recently made a roasted garlic and jalapeno cheese and it was awesome on toast for the mornings.

I don't eat breakfast. But when I do make it, my husband considers it a 2nd breakfast. He also still wants lunch, go figure.

That sounds so delicious! Unfortunately though, I have nothing to contribute, I guess. I rarely eat breakfast. Mostly, I'm just not awake during the AM (third shifter over here) and rarely even have an appetite until the afternoon or even the evening arrives. I do love breakfast foods though. Pancakes, omelets, french toast, granola, etc.

I usually just have a protein shake & some coffee until I get hungry in the afternoon.

I wake up around noon most days because of my work schedule. I still haven't decided if that means that I should eat breakfast food or lunch food. I don't have a standard breakfast at the moment. Sometimes I buy a pastry from the bakery. Sometimes I have bagels. Sometimes I have bacon, eggs, and potatoes. Sometimes I have cereal. Sometimes I cook non-breakfast food. Sometimes it's a yogurt and a fruit. It depends on my appetite and what's in the fridge at the time. Breakfast isn't a steady thing.

In the cold winter months I usually have a whole grain or whole wheat english muffin with peanut butter. Sometimes I cut up a banana and add that on top. In the summer I have cereal with fresh berries.

When I was a kid, at least once a week we would have breakfast for dinner. It's always fun and it's a bit of a change of pace.

Lots of broad interests...

I guess another important question is, how much time do you have to spend making breakfast? Usually a good breakfast meal for me is one I can put together in 5 or 6 minutes or less. (Which is why taking a ciabatta roll out of the freezer every night is workign out so nicely for me!)

General we have egg beaters with vegetables, on wheat toast or English Muffins. Weekend general oatmeal before the gym and Sunday is a relax day so we have Banana or Chocolate Pancakes with real maple syrup.

I'm really big on getting as much nutrition in the morning as possible. Usually peanut butter oatmeal, or banana oatmeal, both made with coconut or almond milk.
Sometimes egg whites and toast with a raw veggie on the side.
Sometimes a green smoothie of spinach, bananas, coconut/almond milk, chia/flax seeds and raw oatmeal. Trust me, the banana totally masks any taste of spinach. It's the best.

Those are my three go-to breakfasts that I never get bored with.

Bagel and tea during the week. On the weekend the hubby normally makes me a full breakfast with either eggs, pancakes or french toast - with bacon and toast. And of course my tea and OJ.

I have eggs.

Sometimes I make the eggs with cheese and/ or bread.

If I don't have enough time I'll grab cereal and milk, or cookies and milk. Sometimes I'll make a burger or french toast (yeah, my family makes fun of me for having burgers for breakfast).

I always have vitamins.

When I remember breakfast its normally something like bagels and cream cheese, eggs of some kinds (normally scrambled cause I break the yolk often) or yogart with fruit and granola.

I regularly make yogurt! It is SUPER easy! The trick to making super-thick Greek-style yogurt is just to make sure the culture you start with is a super-thick Greek-style yogurt! Using raw milk makes a very thick yogurt, too.

My fiance and I have been hooked on overnight refrigerator oatmeal. There are so many options/things you can add to it, and it's filling/low cal/low cost.
