I posted this recipe in a different thread about chicken a little while ago! It's my absolute favorite sauce for chicken or tofu.

3/4 cup peanut butter (either creamy or crunchy, you decide!)
3 tablespoon soy sauce
1 tablespoon real maple syrup
1 teaspoon ground ginger
1 teaspoon 'hot oil'/chili oil (optional, you could also substitute hot sauce)
2 tablespoons white vinegar or rice vinegar
1/2 cup hot water
Heat all the ingredients over medium heat in a small saucepan, and stir until smooth. Heat until it starts to bubble. It might start to get a weird texture at this point, but don't worry! If that's the case, just stir it up and keep cooking it for about three minutes. Turn off the heat, and let it sit for a minute or two, and it should become smooth and creamy.
You can serve it with chicken breasts or thighs, or tofu, and your choice of noodles or rice. I like to serve it on sauteed chicken thighs and udon noodles or white rice. I usually end up doubling the recipe so that I can have the extra sauce with rice for lunch the next day.

Instead of maple syrup, go with honey! And marinade the chicken for a few hours/overnight before cooking. Oh, and, instead of vinegar, go with lime juice. I make this pretty often, with jasmine rice and some green onions and carrots.

Otherwise, there's lots of different options... too many to list. I like to read cooking blogs to come up with new ideas.

you can do just about anything with chicken. I like to smoke whole chickens. Chicken almond salad is also good. Homemade chicken noodle soup. Chicken tacos are really good.

I just try all kinds of different things when cooking with chicken. Some we like, some we don't. But if we like it, I try to write it down and use it again. Try different spices and combinations.

I'm pretty plain, I marinade my chicken breasts in regular italian dressing for a day or so and then bake it! The dressing gives it such a good flavor and it stays super juicy.

I'm a lemon pepper chicken or cajun chicken kind of girl so that's what I cook most often.
For cajun chicken, get a small whole chicken, some cajun seasoning ( I use slap your mama) and some oilve oil. Put the cajun seasoning and oil in a bowl and mix together and then use that and brush all over the chicken, inside the chicken, through the skin to make sure it is thoroughly covered. Put it in a baking dish, put it in the oven on 350 covered in foil until juices run clear.
Lemon Pepper- I use breasts. I cut thick ones sideways to make sure they are thin breasts. I sprinkle Lemon Pepper seasoning on a plate and I lightly pat the chicken breasts over the seasoning to make sure it is covered evenly. I then fry it in a pan and put a 3-4 drops of fresh squeezed lemon on each side while it is cooking. When it is about done, I put a lemon slice on top of each breast and continue cooking until it's done and then serve.
