I made this tonight!
All you need is chicken pieces- if you have a corner store/butcher that sells necks and backs for cheap all the better, otherwise just buy the cheapest pack of chicken pieces you can find. Boil in a pot with water, a whole, unpeeled onion, 1 or 2 carrots, a few celery stalks with leaves (use the inedible center bit, too), maybe a jalapeno or bay leaf and pepper corns...Let it boils for a couple hours on low! Easy and cheap, since you can freeze it to make soups. I need a stock pot now so I can make giant batches.... Then chop and add a bunch of veggies and you have easy soup! yum!
