Tonight I made stuffed peppers with orzo instead of rice, and LOVED it! I thought it was 100% better than rice. Have you ever made them with orzo? How do you make your stuffed peppers?

I have a few different ways I make them, depending on what we have on hand or which one sounds good at the time.
1. Spanish rice and hamburger.
2. Taco meat, refried beans & cheese.
3. Hamburger, mashed potatoes & cheese. (hubby's family recepie)
4. Chili n cheese.
5. Seashell pasta(small), marinara sauce, olives, cheese.

We do ours. as Hamburger meat and cheese. and then bake it. oh sooo good I think I just make up what's for dinner tonight!

I've never had a stuffed pepper that I enjoyed. So, this thread is interesting to me, especially the spanish rice/hamburger combo. I love all three individually, and spanish rice with hamburger is quite yummy (though better with shredded pork loin or shredded beef). I may have to try that.

I've always done mine with hamburger, rice, curry and cheese. But I really like js250's stuffed pepper combos. Especially the mashed potato, cheese and burger!
@ Stormy: I'm not sure if this is how you're supposed to do them, but what I do is cook my stuffing completely so it's ready to eat. I cut the tops off my peppers and hollow them out. Then I boil a pot of water and dunk the pepper in for about 5 mins, keeping the tops out of the water. Then my peppers are ready and still have as much crunch as I want. Stuff them, top with cheese and toss them in the oven on broil just to melt the cheese. I've never had my pepper get too soft by doing this.
