If I have to make it myself, chips, tots, fries, or mashed. If I can rope someone else in, baked or roasted potatos are lovely.

I make some awesome potatoes! I cube them, throw them in a cast iron skillet with some onions and green bell peppers and butter and fry them crispy. They're crunchy on the outside and soft on the inside. Then add a dash of salt and you've got some delicious potatoes! Sometimes, I add mushrooms, cheese, and garlic. Omnom!

My daughter makes chunky small red potatoes brushed with olive oil and covered in grated Parmesan cheese - the mix is baked and tastes great!

Ooooh . . . that sounds good with the Parmesan Cheese and baked. I've don't that sometimes without the cheese but instead used garlic flakes instead.

There are so many good types of potatoes I never knew existed before I started growing my own & could try these different types. I liked them okay before, but now that I've tried different color & types, I have a whole new appreciation for potatoes!

It wasn't until I tried Yukon golds mashed that I ever liked mashed potatoes. I never liked red skinned potatoes, but some of the other waxy varieties are so much better tasting to me, which is why I liked some potato salad for the first time ever this past Summer! Some of the fingerlings are amazing roasted.

Now that more of these forgotten gems are being re-discovered & showing up in groceries & farmer's markets, give some of the exotic colors & types a try; you might be surprised, I know I was!
