My favourite method though, is meat cooked over a hardwood fire (maple,birch)! THAT is the BEST! We use a propane bbq at home and,when there's a fire ban, for camping... mmm... now I'm hungry...rats....

I can appreciate the different flavors or lack thereof with different cooking methods. As long as the food is cooked well, I don't really care one way or the other.

Wood ... brats over willow twigs, venison burgers over apple wood ... most anything smoked with hickory and mesquite.
Gah. I miss real wood and real meat. We don't have either in Florida.

I prefer charcoal for most things, but, gas is good when the cooking time in comparison with the prepping time is just inefficient. I'm looking at you hamburgers and hot dogs.
For quick picnics at the park or when you just really want a grilled hamburger asap, gas. For a steak, chicken, or anything else, charcoal.

A propane grill that is tuned properly creates only heat - it should not affect the flavor of the food. The same is true for properly prepared charcoal. If there is a flavor effect from either, it would be caused by incomplete combustion or a dirty grates
If you want flavor other than the meat or seasonings on the meat, you can add wood chips to either propane or charcoal.

I like the taste added by a good charcoal grill, but it is hard to beat the convenience of propane! I grill every chance I get, so I would be broke if I had to fill the grill with charcoal every time! I usually go through 2.5-3 grill tanks in a summer.

Brats, dogs and burgers get the gas treatment. Backstraps, cow steaks and veggies get the charcoal. Medium rare for me.
All other meat gets smoked over apple wood or hickory.

my BBQ is natural gas. I am waiting to get some more land, then I will build a smoke house and have more room on a deck for a wood burning BBQ.
