Boston-Area Bruschetta
(First time I ever had it was in 1999 and visiting my best friend who's MIL was Italian and taught it to her.)
one loaf Italian bread, cut into 1/2in slices
olive oil
minced garlic
brick mozzarella cheese, sliced thin
roma tomatoes, sliced thin
fresh basil leaves, torn
1. Preheat oven on broil.
2. Brush olive oil on one side of Italian bread. Place on baking sheet and broil in oven for a minute or two until that side is lightly toasted.
3. Remove and brush oil on other side, and sprinkle about a 1/4 teaspoon garlic on top of the oil. Arrange slices of mozzarella on top.
4. Return to broiler until cheese has melted and begins to brown a little.
5. Remove from oven and arrange tomato slices and basil leaves on top. Wait a moment for the toast to cool and the tomato and basil to "melt in".

It's been forever and a minute since I've made that...
Let's see...
fresh diced tomatoes, no seed goo
red onions, diced small
FRESH basil, sliced into ribbons
balsamic vinegar
minced garlic
for best results, let them sit together for an hour or so in the fridge.
Sliced thin, on the diagonal, and toasted French bread
