I've seen FOTVN.com as being a nice small business that does kefir grains.

Great! Here's everything I know : link

Just kidding.

Basically, you usually heat a milk up to an incubating temperature, introduce a culture (and sometimes rennet), and give the milk ... more
Thanks! I just haven't gotten around to it yet. I'm going to wax my cheeses as well so I don't have to worry about power outages, etc. - I will always have cheese!

Yes, I've been reading this lately to bone up for the meeting.

You know, I have never heard of anything like this...

I know that I *have* seen cheeses that included everything from dill, to red pepper flakes, to stout or porter or wine...

I think so long as you allow the milk to separate into curds and whey in an acidic environment, I can't imagine anything going wrong...

Nothing to do but experiment, I guess?

This was interesting. Thank you for the tips.

Not yet! I have heard they are amazing! I have a jar of habanero lacto-fermented hot sauce going right now, and it makes me tingle

One more question from me. It was mentioned that some people drink the whey and I was wondering if anyone knows if this would be similar, or possibly better than drinking the powdered whey protein you can buy

The secret is, make some, convince your friends it's delicious, give them some grains, then if you ever get lazy and stop keepign them, you can hit up your friends for a re-share!

Farmer's cheese or labneh are great ones for experimenting, because there is no cooking, just draining. Anything works in there!

It will be less concentrated, because the whey protein is dried out, and then I think when you mix up a shake with it you add more whey than would naturally have been in that amount of fluid.

But I would think the proteins would be all the better since they don't have to go through the trouble of being dried and turned into powder.

So give it a try! Just be aware that it will taste a little salty.

I was intrigued by the idea that the microbes specific to your hands will affect the bed as you care for it & you will have personalized pickles, cool concept! A lot of people don't realize a proper hot sauce is fermented!

I'm sure it tastes better when it's fresh

Okay everybody, this has been a really awesome meeting, and I learned a heck of a lot of new things to try!

If you want kefir grains, just look up "kefir share" and find somebody friendly. If you want yogurt or buttermilk cultures, just buy a fresh bottle from the store and get to work!

Our next meeting is scheduled for Monday the 15th of April, and we're scheduled to take an in-depth look at how to make sushi! But let's all stay tuned for details.

Yes, some research is coming out now saying our gut "microbe type" may be the next blood type and affect health and healing just as much. Totally fascinating! Makes a lot of sense to me, since nine out of every ten cells in the human body is microbial!

That is really interesting. And sort of explains why when I have a stomachache I want milk, and others have a stomachache and want ginger ale. Totally opposites, and you sure couldn't change either of our minds!

Thank you very much for the lesson! I'm excited that sushi is coming up next! That's something that I have a lot more experience with, so I'll be much more helpful and much less like a deer in the headlights. =)
