#EdenCooks - Corn Chowder and English Muffins - Mon. Oct 17 at 8pm EDT

Welcome to the October meeting of Eden Cooks! We're celebrating a meeting date change---to help you get your ingredients and work the recipes into your weekly cooking plan, we'll now be having our meeting on the 3rd Monday of every month, at the same time.

Eden Cooks is a cooking club for any interested members of the Eden community. We will meet on the forum to discuss everything from tips and pointers for less well-equipped kitchens, explanations of cooking terms, and important techniques. There will be a featured recipe each meeting, with pictures taken as I prepare it for you. I will cover some ingredient substitutions to make each recipe more friendly to people with dietary restrictions.

October can be a very busy month for a cook (if you garden, you'll be canning, pickling, or freezing lots of your crop), so it's good to have a quick, warm and hearty but refreshing recipe like corn chowder on hand when you're feeling rushed. English muffins go together wonderfully with soups, and are easy to prepare by the two-dozen and keep in the freezer to toast when you're feeling rushed later. I'll be sharing an original recipe for corn chowder, as well as the current state of my English muffin recipe (it's ever-evolving, but my mom's been calling the current version "Best Yet, Easiest Yet English Muffins.")

During the meeting, a $25 gift card will be awarded for the winner of a contest where you guess the lesser known kitchen implement from a series of photos that I take. Another will be given to the winner of a trivia contest from information that I will provide during the meeting.

The meeting will take place on the EdenFantasys forum in this very thread at 8 pm EST on Monday, October 17th. I'm really looking forward to this meeting, so I hope to see you there!

Hope everybody's excited to learn to make homemade English muffins! I'm uploading the pictures for Monday's meeting right now, and they looked so tasty I had to go eat one of the leftover muffins.

Excellent! And a great thing about soups, is once you have a basic idea, you can improvise for infinite variety!

I did set up the meeting in two steps---so if you're not feeling like making English muffins, you can always just pop some bread in the toaster to enjoy with your chowder Looking forward to having you there!

Sure thing! The English muffins have a 45 minute rise time, so I don't think you'll be able to follow along in realtime, unless you started them rising a little before the meeting.

Easiest Yet, Tastiest Yet English Muffins (makes 24 muffins)

2 cups whole wheat flour
3 cups all-purpose flour
5 Tbsp yeast (active dry, or use less if you're using quick-rise stuff)
0.25 cup sugar
1 Tbsp salt
2 cups scalded milk
a bit of cornmeal


Quick Corn Chowder (serves 4 as a main course, 8 as a side dish)

3 Tbsp butter
2 Tbsp flour
2.5 tsp finely ground black pepper
~1 tsp salt
quick shake of paprika
1/2 a large onion, chopped
1 clove garlic, chopped
1 stalk celery, chopped
12 oz frozen sweet corn (or fresh, if you have it)
1/3 cup chopped green pepper
3 cups chicken stock (or as much as you have, and fill the rest with water)
1/2 cup cream

If any of those ingredients strike fear into your heart, don't fret! We're going to cover replacement suggestions come meeting time.

Ack, looks like I won't be able to follow the corn chowder in realtime anyway- food intolerance means I have to make stock from scratch. ;^^ I should be around for the meeting anyway, though!

Aw That's too bad! I make stock from scratch too (it's much tastier that way!) but I usually have a mason jar or two in the fridge so I can cook with it on short notice.

That's a good idea. I freeze it in ice-cube trays, but it's hard for me to make a pot of stock and then -not- make it into chicken soup...

I tend to save bones up in the freezer til I've got enough to make a few gallons of stock at a time, and then I can't possibly turn all of it into soup
